Alexx Stuart Adventure Bars {recipe formula}

If you don't yet follow Low Tox Living Alexx Stuart then I suggest you do ASAP, as not only does she run amazing low tox living courses, but her website is filled with handy tips and fab recipes like this one. I've added it here as its the best lunchbox/ breakfast/snack bar recipe formula I have come across- original recipe from


  • 2 cups of small ‘bits’ – Seeds, crushed nuts, buckwheat kernels, desiccated coconut

  • 2/3 cup of grainy bits – such as quinoa flakes, oats or cooked brown rice or 1/2 cup grainy bits, 3 tbsp protein powder

  • 1/2 cup melted coconut oil or butter

  • 1/3 cup rice malt syrup, maple or honey (for crispier slice do 1/2 cup.)

  • 2 tsp sweet spices (cinnamon, ginger, cocoa, vanilla bean powder) Rotate for unique tastes

  • Flaxseed binder – 2 tbsp ground flaxmeal + 4 tbsp water, mixed into a gel by resting before adding to bowl. You can replace with 3-6 eggs for a more cake like slice

  • Optional- add 1/4 cup dried fruit/ cocao nibs/ goji berries


  1. Preheat oven to 180C / 350C

  2. Mix your flax seed meal and water together and sit it for a minute

  3. Mix all other ingredients well into a bowl, by hand.

  4. Add flax mix and mix through well.

  5. Line a small baking tray with parchment paper.

  6. Spread bar out to about a 1cm thickness into the tray. It doesn’t matter if it’s a big tray, it won’t ‘sprawl’.

  7. Bake for 20-25 minutes until well toasted.

  8. Take out of oven and mark your bar marks with a good knife but don’t break apart or remove from tray.

  9. Cool completely. The bars are ready to enjoy.
