2 Minute Muffin {recipe formula}
When I was studying nutrition this was the recipe of the moment, and still one of my all time favourite health hacks. Its so simple and nutritious (high in protein and good fats, free of any nasties) and is perfect for the whole family including little ones. It can be made sweet or savoury, and can be eaten for breakfast, lunch or dinner. What's not to love?!
Ingredients (serves 1)
1/4 cup ground LSA (linseed, sunflower & almond) or flaxseed meal
1 egg
Spices to taste- inspiration includes:
Carrot cake- 1 tsp ground cinnamon & 1/2 grated carrot,
Chai- 1 tsp ground cinnamon, 1/2 tsp ginger, 1/2 tsp cinnamon
Lemon & poppyseed- 2 tbsp lemon, 1 tbs poppyseed
Chocolate- 1 tbsp cocoa, 2 tbsp milk (any type)
Fruit- 1/2 mashed bannana/ 1/2 cup berries/grated apple & walnut/grated pear & ginger
Herb & Cheese- 2 tbsp chopped herbs (dill, basil etc) 1 tbsp grated cheese
Pizza- 1 tbsp chopped tomato, 1 tbs chopped basil, 1/2 tsp oregano, chopped mozzarella
Instructions
1. Crack egg in ramekin/mug and whisk in spices/flavourings.
2 Add LSA/flax meal and mix
3 Microwave for 1-1 1/2 minutes. Alternatively x recipe by 6 and divide into muffin tray and bake in oven on 180 for 15 mins
4. Enjoy! I like to add a spoonful of coconut yoghurt for breakfast, or slice and eat as savoury bread option for lunch
