Flaxseed crackers

May 22, 2016

When I first made these I couldn't believe how easy they were to make, and so now I make them almost weekly. Store bought crackers are often highly processed, high in salt and lacking any nutrients. These are just as convenient and flaxseeds are high in omega 3, fibre and protein so are a nutrient bomb. I've detailed below a basic garlic recipe, though feel free to add any herbs, spices or even fruit for variations.

Ingredients:

  • 2 cups ground flaxseed (you can buy it pre-ground or grind your own linseeds)

  • 1 cup water (start with 3/4 c. and add more as needed to make a workable dough)

  • 1/2 tsp salt

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

Directions:

  1. Preheat oven to 400 degrees.

  2. In a large bowl, combine all the ingredients and mix until an even dough forms.

  3. Spread evenly onto a parchment or silicone lined baking sheet - about 1/8-1/4 inch thick.

  4. Gently cut dough into squares on the baking sheet (you just need to score the dough so it snaps after it's baked)

  5. Bake for 20-30 minutes until crisp and edges are browned but not burnt.
